Savory Skillet Breakfast Bowl Recipe

This easy skillet breakfast bowl is our go-to for busy mornings—and it just happens to be inspired by one of our favorite Disney eats! We first had this hearty combo of sausage, eggs, potatoes, and cheese at the Yak & Yeti Local Food Cafes in Disney’s Animal Kingdom, and we’ve been hooked ever since.

It’s simple to make at home, comes together in one pan, and keeps everyone full and happy for hours.

Ingredients you’ll need

To get started making this recipe, you’ll first want to gather all your ingredients first.

Here is what you’ll need:

large eggs

4 slices

bacon, ½ lb breakfast sausage, or a mix of both

1

green bell pepper, diced

2 cups

cups diced potatoes (pre-cooked or parboiled)

1/2 cup

diced onion (yellow or white)

1 cup

shredded mild or sharp cheddar cheese

garnish

sliced green onions, for garnish

to taste

salt & pepper

optional

hot sauce or salsa for serving

Using pre-cooked or leftover potatoes helps this breakfast bowl come together even faster on busy mornings.

Step by Step Instructions

Step 1: Cook the meat. In a large cast iron or nonstick skillet, cook over medium heat, cook the bacon or sausage (or both!) until browned and crispy. Remove and set aside, leaving a bit of the drippings in the pan.

Step 2: Sauté the veggies. Add diced potatoes, green bell pepper, and onion to the same skillet. Cook for 8–10 minutes, stirring occasionally, until golden and tender. Season with salt and pepper.

Step 3: Scramble the eggs. In a separate pan, scramble the eggs to your liking. (Or push the veggies aside and cook them in the same skillet to save dishes!)

Step 4: Assemble the bowl. Return the cooked meat to the skillet and stir everything together. Top with shredded cheese and let it melt over the warm ingredients.

Step 5: Garnish & serve: Sprinkle with sliced green onions and serve hot. Add hot sauce or salsa if you like a little heat.
