4slicesbacon½ lb breakfast sausage, or a mix of both
1green bell pepperdiced
2cupscups diced potatoespre-cooked or parboiled
1/2cupdiced onionyellow or white
1cupshredded mild or sharp cheddar cheese
sliced green onionsfor garnish
to taste - salt & pepper
optional - hot sauce or salsa for serving
Instructions
Cook the meat. In a large skillet over medium heat, cook the bacon or sausage (or both!) until browned and crispy. Remove and set aside, leaving a bit of the drippings in the pan.
Sauté the veggies. Add diced potatoes, green bell pepper, and onion to the same skillet. Cook for 8–10 minutes, stirring occasionally, until golden and tender. Season with salt and pepper.
Scramble the eggs. In a separate pan, scramble the eggs to your liking. (Or push the veggies aside and cook them in the same skillet to save dishes!)
Assemble the bowl. Return the cooked meat to the skillet and stir everything together. Top with shredded cheese and let it melt over the warm ingredients.
Garnish & serve: Sprinkle with sliced green onions and serve hot. Add hot sauce or salsa if you like a little heat.
