Savory Skillet Breakfast Bowl Recipe

A simple, satisfying breakfast bowl.

Ingredients

  • 4 large eggs
  • 4 slices bacon ½ lb breakfast sausage, or a mix of both
  • 1 green bell pepper diced
  • 2 cups cups diced potatoes pre-cooked or parboiled
  • 1/2 cup diced onion yellow or white
  • 1 cup shredded mild or sharp cheddar cheese
  • sliced green onions for garnish
  • to taste - salt & pepper
  • optional - hot sauce or salsa for serving

Instructions

  • Cook the meat. In a large skillet over medium heat, cook the bacon or sausage (or both!) until browned and crispy. Remove and set aside, leaving a bit of the drippings in the pan.
  • Sauté the veggies. Add diced potatoes, green bell pepper, and onion to the same skillet. Cook for 8–10 minutes, stirring occasionally, until golden and tender. Season with salt and pepper.
  • Scramble the eggs. In a separate pan, scramble the eggs to your liking. (Or push the veggies aside and cook them in the same skillet to save dishes!)
  • Assemble the bowl. Return the cooked meat to the skillet and stir everything together. Top with shredded cheese and let it melt over the warm ingredients.
  • Garnish & serve: Sprinkle with sliced green onions and serve hot. Add hot sauce or salsa if you like a little heat.
