Easy Turkey Chili with Black Beans and Corn

This easy turkey chili is one of those go-to meals that hits the spot every single time.

Ingredients

  • 1 tablespoon olive oil or avocado oil
  • 1 lb ground turkey
  • 1 can Rotel diced tomatoes with green chiles
  • 1 can sweet corn drained
  • 1 can black beans rinsed and drained
  • 1 packet McCormick chili seasoning mix or 2 tbsp homemade chili seasoning
  • 1 cup water
  • Salt and pepper to taste
  • 1 cup sharp cheddar cheese for topping
  • Sour cream for topping
  • Sliced green onion for topping
  • Tostitos Scoops for serving

Instructions

  • Heat oil in a large pot over medium heat.
  • Add ground turkey and cook until browned and fully cooked, breaking it apart with a spatula.
  • Stir in the Rotel, corn, black beans, chili seasoning, and water.
  • Season with salt and pepper to taste.
  • Bring to a gentle simmer, then reduce heat and cook uncovered for about 15–20 minutes, stirring occasionally.
  • Ladle into bowls and top with shredded cheddar, sour cream, and green onions.
  • Serve with Tostitos Scoops for dipping and enjoy!

Notes

Let this recipe simmer for a bit longer on low on the stove and the beans and corn soften up nicely!
