Ingredients

olive oil or avocado oil

ground turkey

can Rotel
diced tomatoes with green chiles

can sweet corn
drained

can black beans
rinsed and drained

packet McCormick chili seasoning mix
or 2 tbsp homemade chili seasoning

water
Salt and pepper to taste

sharp cheddar cheese
for topping
Sour cream
for topping
Sliced green onion

Instructions
Heat oil in a large pot over medium heat.
Add ground turkey and cook until browned and fully cooked, breaking it apart with a spatula.
Stir in the Rotel, corn, black beans, chili seasoning, and water.
Season with salt and pepper to taste.
Bring to a gentle simmer, then reduce heat and cook uncovered for about 15–20 minutes, stirring occasionally.
Ladle into bowls and top with shredded cheddar, sour cream, and green onions.
Serve with Tostitos Scoops for dipping and enjoy!

Let this recipe simmer for a bit longer on low on the stove and the beans and corn soften up nicely!
